Almond Puff Pastry (Video)





Ingredients:

Frozen puff pastry sheets
egg
sliced almond
sugar
maple syrup

I don't write amount
because it depends on how sweet and how many almonds you want.





Steps:
1. Preheat oven to 350℉  (175℃)
2. Place Frozen puff pastry sheets on parchment covered pan
3. Brush pastry sheets with eggs
4. Sprinkle sliced almonds and sugar on pastry sheets
5. Stick together sliced and almonds by using plastic wrap
6. Cut into small bar size and separate the pastries
7. Bake for 10 mins then take out from oven
8. Brush with maple syrup then bake for another 10 mins.
9. Cool it completely. Serve

Hash Brown Tart (Video)


To be honest, I really don't know what I can call this food. 
Hash Browns? Omelette?
I knew it in Taiwan, they called it "Hash Brown Tart"
so...let's call it hash brown tart :P
I show u hash brown recipe as well.


Hash Brown ingredients

1 potato
1 tbsp potato starch
pinches of salt & pepper



Hash Brown steps:

1. chop potato into 0.2-0.3cm
2. put into a microwaveable bowl, 
    cover with microwaveable plastic wrap, and microwave for 3 Mins
3. Add potato starch, salt and pepper into microwaved potato, then mix well
4. Use plastic wrap to shape potato into a rectangle.
    (It's better to use plastic wrap, otherwise it will stick on your hands)
5. Heat oil to 320℉ (160℃), then fry both sides to golden brown. 
   
   Hash Brown is done





Hash brown Tart ingredients:

2 hash brown
2 egg
1 sliced cheese
ketchup for decorating




Hash brown tart steps:

1. Heat oil on medium heat
2. Beat eggs then make a thin circle omelette in frypan
3. Before omelette is done, add one hash brown
    then top with sliced cheese and another hash brown
4. When omelette is done, move it to a plate
5. Cover all hash browns and decorate with ketchup. Serve hot.

Chocolate Soufflé (Video)











Ingredients:
1tbsp melted unsalted butter
1tbsp sieved cocoa powder

160g milk
70g chopped 70% dark chocolate
3 egg yolk
1.5 tbsp sugar
1tbsp cake flour

3 egg white
3tbsp sugar

cocoa powder or confectioners sugar for garnish





How to:
1. Preheat the oven to 355℉ (180℃)

2. Brush ramekins with butter, then coat with cocoa powder.
    (You can use sugar also, but I like cocoa powder more)
3. Heat mil over low heat, when it is about to boil, turn off the heat

4. Add chopped chocolate into milk then stir well. Set aside, make it cooler.
    (It's important that let it cooler, otherwise you will get scrambled egg later)

5. Stir together yolks and 1.5tbsp sugar in a mixing bowl. add cake flour, stir well

6. Add yolk batter into chocolate milk and mix will.
    Heat them over low heat until thickened.

7. Transfer chocolate batter into a mixing bowl. set aside

8. Whisk egg whites by a mixer, whisk until frothy.
    then slowly add 3tbsp sugar in 3 times, beat until stiff peak form.

9. Fold a 1/3 egg whites into chocolate batter then mix well.
    Fold in remaining white, gently mix until blended.
   (please do not mix fast or over mix,  I show you how to stir in the tutorial.)

10. Pour, ladle or spoon the mixture into ramekins, and bang them lightly.

11. Bake for 15-20mins, then dust with cocoa powder immediately and fast. Serve hot.
      (you can dust with confectioners sugar as well.)
